Established 1920 by Eugene Chevalier, who chose a location amongst the finest vineyards at the heart of southern Burgundy. Chevalier de France Blanc de Blancs starts with a selection of Chardonnay, Colombard and Ugni Blanc, from the Nuits-Saint-Georges. A delightfully fresh and delicate sparkling wine with a charming touch of fruitiness, Brut without being austere. Fruity aromas, a light body and an elegant style, the finish is lingering and clean.

This ensures contact with the sedimentery lees, contributing mouthfeel and infusing toasty bread characters. This process continues for several months, followed by bottling and an extended term of remuage, degorgement and reseal under Liqueur de dosage. A true methode traditionnelle crafted from the pick of Burgundian fruit.

Crafted to the true Methode traditionelle which ensures richness of palate and fullness of texture, La Zona has been treated to a second fermentation within it's own bottle.

Pale straw coloured with green hues, a lovely bead and fine mousse. Nose of melons and citrus, green apples, almond and honey. The front palate bursts with dry, delicately flavoured bubbles. A crisp but not overly acid palate supports the bubbles through to the finish. A great aperitivo and ideal accompaniment to oysters, scallops, and crab. Drink young and fresh.

Clover Hill's been producing pure varietal sparkling Chardonnay for many years. Assembled from a selection of elite Cuvees, matured on yeast lees for four years, followed by twelve months of ageing under cork prior to release. Disgorged with an addition of reserve wine, the doseage is prepared from components of Clover Hill reposing in oaken foudres. Clover Hill is the essential Australian Blanc de Blanc sparkling with a crisp profile of fruit, exceptional length and lasting flavours.

$7599each $911DOZEN EACH DOZEN Located along the Pipers River of northeast Tasmania, Clover Hill was established in the eighties as a dedicated sparkling wine estate, planted solely to the traditional varietals, Chardonnay, Pinot Noir and Pinot Meunier. The sixty six hectare property overlooking Bass Strait has a similar climate to the Champagne region of France. Vines are close spaced and planted on deep, red volcanic soil in a frost-free amphitheatre, orientated north/south to maximise sunlight exposure.

Crafted according to true Methode Traditionelle, fermented in its own bottle and aged on yeast lees for three years, ensuring the complexity and intensity which is the hallmark of Clover Hill. The final liqueur dosage is prepared from a selection of precious stocks, aged in oak foudres.
